Banana and Blueberry Bread

On those slow Sunday mornings when I feel like spending a few hours in the kitchen, one of my go-to recipes is this quick and easy Banana and Blueberry Bread 🍞


This recipe is an ideal option to turn to when I have the time to make something from scratch and it always makes me feel productive to bake with the week ahead in mind.


On a weekday, I love to be able to just come downstairs and quickly grab a few pieces of this beautifully toasted loaf and a hot cup of tea before I begin my day.


CAKEY TREAT or QUICK LOAF?


One of the many reasons I love this recipe is that it's a huge hit with everyone in my household. It can be enjoyed as a cake-like treat or a quick alternative to baking bread from scratch, but I adore this loaf regardless of how it is served.


In the mood for some cake? Consider baking this loaf with glace cherries as an alternate recipe idea.

BANANA and BLUEBERRY BREAD


Ingredients List 📝


  • 60g unsalted butter

  • 50g crunchy peanut butter

  • 100g caster sugar

  • 240g strong white bread flour

  • 2 eggs, room temperature

  • 200g of blueberries

  • 2 large bananas

  • 1 tsp of cinnamon


Baking Method 🍪


1. To begin, grease one small loaf tin with butter and line it with baking paper.


2. Chop two large bananas into small chunks, and wash 200g of blueberries before setting the fruit to one side.


3. For the next stage, use an electric mixer to combine the butter, sifted sugar and whisked eggs in a bowl.


4. Next, sift the strong white bread flour and 1 tsp of cinnamon into the mixing bowl before adding the crunchy peanut butter into the mix.


5. Once the ingredients have combined, pour the blueberries and pieces of chopped banana into the mixture and stir gently with a wooden spoon.


6. Once stirred, pour the mixture into the tin, ensuring that pieces of banana and blueberry are spread evenly throughout.


7. Give the tin a light shake from left to right to ensure that the mixture meets the sides of the tin.


8. Then, place the tin in the oven at 180C/ Fan 160C/ Gas Mark 4 and bake the bread for around 35 - 40 minutes, or until the loaf is golden brown.


9. Once the loaf is cooked, remove it from the oven and set aside to cool before lifting the bake onto a wire rack.


10. Once cool, transfer the loaf onto a wooden chopping board and place it underneath a cake dome, in a cake tin or cover with foil to keep fresh.


TOP Tip.


To serve, cut the loaf into thin slices and place it under the grill or pop into the toaster to serve warm with melted butter. Enjoy!


Recipe Idea 💡


To turn this delicious bread recipe into a cake-like treat, grab a handful of glace cherries and chop them into smaller chunks before adding them to the mixture.


Once the bake has cooled, cut the loaf cake into thicker slices and place in a microwave on low heat for 1 minute or until the dough is warm and top with butter to serve.
