Apple and Salted Caramel Cake

Undoubtedly one of the cosiest recipes in my little cookbook is this Apple and Salted Caramel Cake with Cinnamon Drizzle Icing 🍎


An apple sponge cake just has a certain nostalgic appeal, and with hints of sweet caramel, cinnamon, and gooey frosting encasing the most succulent pieces of warm, crisp apple, it's no surprise that this recipe is a favourite in my household.


SPONGE CAKE or HEARTY PUD?


One of the many reasons I love this recipe as a baker is that it's a total crowd-pleaser. It can be enjoyed at room temperature as a mouth-watering sponge cake, or slightly warm as a hearty pudding.


I adore this cake regardless of how it is served, but when the sponge is slightly warm, the icing begins to ooze and soak into the cake. So, adding custard to this recipe turns an exquisite cake into a nostalgic pudding straight out of Grandma's kitchen pantry.

APPLE AND SALTED CARAMEL CAKE with CINNAMON DRIZZLE ICING


Ingredients List 📝


  • 175g softened butter

  • 175g muscovado sugar

  • 225g self-raising flour

  • 3 eggs, room temperature

  • 3 large Braeburn apples

  • 1 dsp Monin salted caramel syrup

  • 1 tbsp cinnamon, plus extra to sprinkle

  • 1 cap of vanilla extract

  • Icing sugar and water, to decorate


Baking Method 🍪


1. Preheat the oven to 180C/ Fan 160C/ Gas Mark 4. Then, grease two 20cm cake tins with butter and line with baking paper.


2. Next, measure and combine the butter and sugar in a large mixing bowl. Once the mixture is light and fluffy, add 3 whisked eggs into the mix and stir.


3. Sift in the flour, and combine with the mixture before setting the bowl to one side.


4. Next, peel, de-core and chop 3 apples, placing the chunks in a separate small bowl.


5. Add 1 tbsp of cinnamon and 1 dsp of salted caramel syrup into the bowl before stirring, ensuring that each piece of apple is fully coated with flavour.


6. Then, add 1 cap of vanilla extract into the mixing bowl and combine with the rest of the ingredients.


7. Place the coated chunks of apple into the bowl and stir with a large wooden spoon.


8. Once mixed, pour the cake batter evenly into two cake tins and bake in a preheated oven for 30 minutes.


9. Once cooked, position the cake on a wire rack and set it to one side to cool.


For the Icing 🎂


10. While the cake is still slightly warm, place the sponge halves on a chopping board or plate.


11. Mix some icing sugar and water together in a separate bowl and combine until the desired consistency is reached. Pour and spread the icing into the centre of the cake, assemble the sponge and drizzle over the top.


12. Once the icing has drizzled down the sides of the cake, transfer the sponge onto a stand, cake tier or serving plate and sprinkle lightly with cinnamon to finish.


TOP Tip.


Place the cake in the fridge to allow the icing to set. Then, once the icing is firm, remove the cake from the fridge and serve at room temperature or with custard as a heartwarming pudding.
